This lamb dish taste like the authentic "Kambing Guling" or slow roast lamb in fire pit. It is sweet, savory, a bit spicy and overall satisfying and it does not taste "gamey".
In indonesian: Meuni lekoh pisaaannnnn.. I think this dish appeals to both Indonesian and foreigner taste ..

Ingredients:

1 Package of lambrack. Note: biasanya bentuknya seperti ini dan terdiri dari 8-10 iga potong2x sehingga masing2x punya tulang sendiri (jadi 8-10 potong)

1/2 cup kecap manis (sweeet soy sauce)

2 tsp chili flakes

1/2 cup butter (1 stick) 

1 stalk of green onion (cut thinly)

Marinade:

8 Shallots

6 cloves of garlic

2 tbsp ground corriander

1 teaspoon white pepper

1 1/2 teaspoon salt

1 cube chicken buillon (chicken stock)

1/4 cup oil

Method:

1. Mix all of the marinade ingredients in a blender until smooth.

2. Put lamb chop and the marinade in a ziplock plastic bag and leave it for 3 hours or longer, i personally marinade it for 24 hours.

3. Take the meat out from the marinade and make sure that it doesnt have too much marinade sticking on it (it'll burn quick). Save the marinade.

4. Cook the lamb on a grill (or on an ironcast grill pan) until it has that grill marks but not quite done, set aside

5. Melt the butter and sautee the leftover marinade until frgrant, add chilli flakes and sweet soy sauce. cook for 5 minutes in medium heat and add the chopped green onion. Adjust the taste with salt/ sugar or pepper to your liking.

6. Dip the grilled lamb in the sweet soy sauce mix and put it back onto the grill and cook until desired doneness, watch for burns. This caramelizes fast.

Serve with more soy sauce as dipping and either roasted potatoes or butter fried rice also pickeled carrots, onion and carrots Recipe to follow.

 

Butter fried rice:

Ingredients:

6 cups cooked rice

2 tbsp butter

1 clove garlic

1/2 tbs parsley

salt and pepper

Juice of 1/4 lime

Method:

Melt butter until slightly browned and nutty. Add garlic and saute very quick and then add rice, salt , pepper and parsley. Squeze the lime at the last minute. Serve with the lamb chop.

 

Indonesian Pickeled Cucumber, Carrots and Onion

Ingredients:

1 Stalk of Carrot, wash and julienned

1 Cucumber, half lengthwise, remove seed and cut

15 thai chilis, poke with fork

1 small vidalia onion, cut into 8 wedges

4 tbsp of sugar

1 tbs salt

1 cup aple cider vinegar

Method: 

1. Mix cut vegetable in a plastic container

2. Sprinkle salt, sugar and add vinegar

3. Cover and shake until sugar dissolve, keep in refrigerator for minimum of 3 hours

Note: Do not add water as the vegetables will secrete some liquid.
