Fried green tomato is a very popular side dish in the southern states of the US. I first encounter it when I went to the farmer's market in Honolulu (how weird is that!) and I have been crazy about it since. It is a very good dish to eat on its own as a snack or you can even use it in a sandwich. It has different texture, crunchy but juicy at the same time and the dipping sauces cools the fried tomatoes nicely.. they really complement each other.. and also it's made of tomatoes so it can't be bad, right??
Ingredients:
4 Medium size ripe but firm green tomatoes
2 egg whites, whip lightly
1/2 cup all purpose flour
1/2 cup bread crumbs
1/4 cup corn meal (not corn starch/ maizena)
1/4 cup grated parmesan
1 tsp pepper
1/2 stp salt
1/2 tsp paprika powder
2 cups vegetable oil for frying
Method:
1. Cut the tomatoes into 1/2 inches thickness, sprinkle with salt then blot lightly with paper towel.
2. Mix bread crumbs,corn meal, parmesan, paprika powder, salt and pepper together set aside.
3. Do this one by one: Dredge the tomatoes with the plain flowers, then dip them in the whipped egg whites, and dredge them again in the breadcrumb mix. Set them aside on a cookie sheet until ready to be fried.
4. Fry in a medium-hot oil (around 375F) until golden brown about 1 minute or so per side, do not overcook them. Serve with your choice of sauces.
Here I have listed 4 kinds of sauces to dip this fried tomatoes. Two have asian flare because of the wasabi and the chili sauce, one has mediteranian because of the sundried tomatoes and the other one is simply southern style. I made all four and just dip the tomatoes in a different sauce with every bite GREEDY, but who cares?? yummm
Wasabi Mayo
1/2 cup storebought mayonaise
1 tbsp wasabi paste
1/2 tsp grated ginger
4 tbsp milk/ buttermilk
salt n pepper
Method: Mix all ingredients together, adjust the seasoning
Sun Dried Tomayo
1/2 cup storebought mayonaise
1 tbsp sun dried tomato paste or chopped dried tomatoes in oil
1 tbsp lemon juice
1 tbsp olive oil
1 tsp sugar
2 tbsp milk/ buttermilk
salt n pepper
Method: Mix all ingredients together and adjust the seasoning.
Lemon Dill Mayo
1/2 cup storebought mayonaise
1 tsp lemon rind
1 tbsp of lemon juice
3 tbsp milk/ buttermilk
2 tsp dill
1/2 tsp crushed garlic
salt n pepper
Method: Mix all the ingredients and adjust the seasoning to your liking
Sweet Chili Mayo Indo Style
1/2 cup store bought mayonaise
1 tbsp indonesian hot sauce such as ABC or other sweet chili sauce
1 tbsp tomato catchup
1 tsp sugar
1 tsp yellow mustard
4 tbsp milk/ buttermilk
1/2 tsp crushed garlic
salt n pepper
Method: Mix all the ingredients and adjust the seasoning to your liking
Note: U can put the sauces in a squirt bottles and just decorate the plate with the sauces and the top with the tomatoes..
